Bacon and Date Appetizer
Ingredients (makes 6 servings):
- 1 (8 ounce) package pitted dates
- 1 pound sliced bacon
- 4 ounces almonds
- Toothpicks
Instructions
- Preheat oven to 400
- Put an almond inside a slit date
- Wrap bacon around the date and secure the bacon with a toothpick
- Bake approximately 12 minutes, turning occasionally for even cooking
Baked Ham with Sweet Glaze
Ingredients
- 1 fully cooked bone in ham (10 lbs)
- 4 cups boiling water
- 1 cup brown sugar
- 2 tablespoons all-purpose flour
- 2 tablespoons dry mustard powder
- ¼ cup honey
- 1 teaspoon lemon juice
- 1 can pineapple chunks, drained (20 oz)
- 1 jar maraschino cherries, drained (10 oz)
- Toothpicks
Instructions
- Preheat oven to 400 degrees F and place ham on a rack set in a roasting pan. Pour ½ inch boiling water into the pan beneath the ham
- Bake the ham in the preheated oven for 2 hours, or until a meat thermometer inserted into the thickest part of the meat is at 140 degrees F
- Reduce the oven heat to 350 degrees and remove ham from the oven
- Mix together brown sugar, flour, dry mustard, honey, and lemon juice in a bowl and brush onto the ham
- Skewer 1 pineapple chunk and 1 maraschino cherry per toothpick and insert the picks all over the ham
- Return the ham and roast for 15 minutes. Baste the ham, including the fruit, with the juices that have collected in the bottom of the pan and return to the oven. Roast 15 more minutes. Let the ham cool 10 minutes before slicing.
Taffy Apple Salad
Salad that tastes like a caramel apple
Ingredients:
- 1 can chunk pineapple, drained but save the juice
- 2 cups miniature marshmallows
- ½ cup sugar
- 1 tablespoon flour
- 1 egg, beated
- ½ teaspoon white vinegar
- Container of cool whip
- 2 cups apples, chopped but unpeeled
- 3 snickers candy bars, chopped
Instructions:
- The night before serving mix the drained pineapple and the marshmallows
- Cover in a bowl and refrigerate overnight
- Mix the pineapple juice, flour, sugar, beaten egg and vinegar in a bowl
- In a medium saucepan, cook the mixture over medium heat, stirring continuously until thick. Cover the mixture and refrigerate overnight.
- The next day, mix both refrigerated mixes together
- Mix in the cool whip, apples, and snickers
- Refrigerate 1 hour before serving
